Making a delicious and impressive dessert does not have to be complicated and time consuming. Using store bought frozen puff pastry is a simple short cut to a fantastic combination of hot and cold, gooey and crunchy. To make things even more simple, you can bake the pastry shells up ahead of time so that they are ready to go when it's show time. The flavors are light and yet decadent and indulgent. To make this simple dessert you will need the following.

Brandied Bananas and Ice Cream Dessert Recipe
Ingredients:
4 tablespoon butter, softened
1/4 cup light brown sugar
4 ripe bananas
1/8 teaspoon ground cinnamon
1/2 teaspoon fresh lemon juice
3 tablespoons Korbel Reserve Brandy
1 sheet Pepperidge Farms Puff Pastry
half gallon Dreyers Grand Vanilla ice cream
Whipped cream or Cool Whip topping.
For best results make sure to defrost the puff pastry according to package directions. Cooking and assembly of dessert will be fairly quick once the pastry is ready but allow time for it to cool before handling. If you choose, you can bake up both sheets of pastry and freeze for use at a later time. Use the following steps to make your dessert.
Instructions:
Pre-heat oven to 400 degrees.
Unfold pastry onto waxed paper and cut into 6 rectangles.
Place on non-stick cookie sheet or line cookie sheet with parchment paper.
Bake 15-20 minutes until golden.
Cool on racks for 30 minutes.
Split open pastry with sharp knife and place on serving plates
Peel and slice bananas 1/2 in thick.
Melt butter in non-stick sautee pan.
Sautee sliced bananas in butter 2 minutes and add brandy and brown sugar.
Stir to mix, add lemon and cinnamon and stir
Remove from heat.
Place scoops of Ice cream onto bottom side of split pastry.
Spoon hot banana compote over ice cream.
Top with a dollop of whipped cream.
Top with pastry lid and serve.
Work quickly at serving time to avoid soggy pastry and cold compote. Do not over cook bananas, or brown them. Serves 6.
Variations:
Cut uncooked pastry into 4" circles or into heart shapes for a more dramatic presentation. You can drizzle chocolate sauce over the top to enhance flavors or sprinkle with nuts. For a reduced calorie dessert use Dryers Light or frozen yogurt and make the pastry shells smaller, in 3"x3" squares.
The extra pastry shells can be used for a savory dish by filling the split shells with tuna or chicken salad for a luncheon or with a bacon, spinache and scrambled egg mix for an elegant brunch dish. People will think you spent hours on these delicate morsals but we won't tell.
